Easy-peasy low-calorie Christmas canapés

These simple-to-make canape recipes are tasty, healthy, low calorie and sure to please! How could you ask for anything better to snack on at a celebration?

Smoked salmon blinis

Makes 16 (33cals, 1.2g fat per blini)

5 tbsp reduced-fat soured cream
1tsp horseradish sauce
Pack 16 mini or cocktail blinis
50g smoked salmon, cut into 16 pieces
1tsp lemon juice
Fresh dill sprigs, to garnish

Mix the soured cream with the horseradish, then spoon a little onto each blini. Mix the smoked salmon with the lemon juice, then top each blini with a piece of smoked salmon. Season with black pepper and garnish with dill to serve.

Greek salad bites

Makes 18 (27cals, 1.7g fat per bite)

18 thick cucumber slices
200g pack reduced-fat feta cheese, cut into 18 cubes
18 mint leaves
18 pitted black olives
18 cherry tomatoes
18 cocktail sticks

Thread a piece of cucumber onto a cocktail stick, then push to the end of the stick so the canapé will stand up. Add a cube of feta, a mint leaf, an olive and a tomato to each stick. Arrange the canapés on a plate and serve.

Mediterranean prawn cups

Makes 20 (18cals, 1.2g fat per canapé)

2tbsp olive oil
Zest and juice 1 lemon
1-2 cloves garlic, crushed
2tbsp fresh parsley, finely chopped
200g pack peeled king prawns
20 similar-sized little gem lettuce leaves

Combine the oil, lemon juice and zest, garlic, parsley and prawns, mix well and leave to marinate for 10 minutes.
In a preheated non-stick pan (you don’t need to add any extra oil) fry the prawns for around five minutes, turning occasionally, until cooked through. Leave to cool. Fill the little gem leaves with the prawn mixture, spooning over any pan juices, and serve.

Prosciutto-wrapped asparagus tips

Makes 20 (24cals, 1.6g fat per canapé)

20 asparagus tips
Zest and juice ½ lemon
1tbsp olive oil
10 slices prosciutto, halved lengthways

Toss the asparagus tips with the lemon zest and juice and olive oil. Wrap each asparagus tip with a piece of prosciutto, then fry in a griddle pan or frying pan (no need to add extra oil) for 3-4min until chargrilled. Arrange on a platter and serve.

Celery boats with blue cheese and walnuts

Makes 20 (30cals, 2.6g fat per canapé)

100g extra light cream cheese, softened
50g Danish blue cheese, crumbled
50g walnuts, roughly chopped
5 celery sticks, each cut into 4 pieces

Mix the cream cheese, blue cheese and two thirds of the walnuts together. Pile the filling into the celery pieces and chill. Just before serving, sprinkle over the remaining walnuts.
