Fast, tasty, easy: try our cannelloni recipe

This simple, healthy vegetarian recipe is tasty and hearty enough to delight guests (and other halves) – and easy enough to keep you happy, too!

When you’re running around from pillar to post, it can feel like a stretch to bake a couple of potatoes, let alone cook a healthy recipe from scratch. No wonder we so often resort to ready meals or even eating out (when our budgets allow).

That’s why Fairy has teamed up with Tasty to produce this delicious Cannelloni recipe, which – as you can see from the video above – is super-fast, really easy and incredibly tasty, and will feed two of you for a couple of nights running, or make a hearty centrepiece for casual dinner parties.

Cannelloni


Ingredients

500g spinach

1/4tsp nutmeg, grated

250g ricotta

50g Parmesan, grated

1 egg, beaten

4 lasagne sheets

Handful fresh basil leaves

350g ready-made pasta sauce

100g mozzarella, grated

Method

  1. Drizzle some olive oil into a frying pan on a low heat.

  2. Add the spinach, season with salt and pepper and the nutmeg.

  3. Stir until mixed and wilted, then transfer to a bowl.

  4. Add the ricotta, Parmesan and egg to the bowl, and mix into the spinach until evenly distributed.

  5. On a fresh lasagne sheet, put a line of the mixture at one end.

  6. Roll up carefully, allowing the ends to overlap, cut halfway across the sheet and carefully place the tube into a rectangular dish.

  7. Repeat until the dish contains eight cannelloni.

  8. Sprinkle with fresh basil leaves, cover with 350g ready-made pasta sauce, and sprinkle over 100g grated mozzarella.

  9. Bake at 180ºC/350ºF for 30-35 minutes.

  10. Serve two cannelloni per person.
