When life gets busy, it’s all too easy to just default to a ready-meal or even a takeaway. But cooking fresh food doesn’t need to be difficult, fiddly or complicated. Make this chicken pesto bake a staple in your repertoire, and you’ve got a dish that grown-ups and grandkids will love, and that’s impressive enough for a dinner party, too.
If you haven’t got time to make the pesto, just buy a tub of fresh pesto from the supermarket (it’s more flavoursome than pesto in a jar).

Chicken pesto bake
Ingredients
For the pesto
40g fresh basil
60g pine nuts, toasted
60g Parmesan cheese, grated
2 cloves of garlic, crushed
100ml olive oil
For the bake
2-4 chicken breasts (about 600g)
35g sun-dried tomatoes
100g mozzarella, thickly sliced
Method

Preheat the oven to 180ºC/350ºF.

Put all the pesto ingredients in a blender and pulse until they’re the right texture.

Season the base of your baking dish with salt and pepper.

Place three chicken breasts on top, then season again.

Spread the pesto over the chicken, thickly and evenly, and top with the sun-dried tomatoes and mozzarella.

Bake for 25-30 minutes.

Serve with a crispy salad and some crunchy bread.
